Cherokee Green was selected from a chance green fruit on Cherokee Purple—same dense flesh and rich flavor, but it stays chartreuse with an amber blush when ripe. Don’t let the color fool you; it’s fully sweet and complex.
Slice for salads where you want contrast or pickle thick slabs. Indeterminate vines set steadily with heat. Harvest when the bottom just hints yellow. Use the fruit fresh, roasted, sauced, canned, or eaten warm from the vine, depending on the variety.
