Description
Mulato Isleño is a Mexican poblano type that ripens chocolate brown and dries into the mild, raisiny-sweet chilies used for mole sauces. Fresh green pods roast beautifully; dried, they grind into deep, smoky powders.
Heat is gentle (1,000–2,500 Scovilles), so flavor leads. Plants are productive with warmth and steady moisture. Pantry gold for winter cooking. Use the fruits fresh, roasted, pickled, stuffed, dried, or ground, depending on their sweetness and heat.
