Description
Lacinato kale, also called Tuscan or Dinosaur kale, is an Italian heirloom with long, narrow leaves that look quilted, blue-green, and almost prehistoric. Grown in Tuscany for generations, it has a tender bite when young and a deeper, sweeter character after cool weather settles in.
The upright plants are handsome in the garden and easy to harvest leaf by leaf. Use Lacinato fresh, sautéed, braised, or tucked into soups, where its dark leaves hold their shape and bring old-world garden flavor to the pot.
