Description
Coffee Chicory (Cichorium intybus var. sativum) is a perennial selected for its thick taproot, traditionally roasted and ground as a coffee substitute or additive. Roots are generally harvested after the first growing season. Plants left in the ground become long lived clumps with blue summer flowers that attract pollinators.
