Caraway has fern-like foliage and produces white umbel flowers throughout the summer. The seeds should be harvested when they become brown, usually occurring in mid to late summer. Seeds have a pungent, nutty, licorice like flavor and aroma that are often used as a spice in bread, and sauerkraut. The flavor of the leaves is much more subtle and are commonly used in salads, soups, cheese and stews. May not develop seeds until second year.
